In China, the art of scenting teas with fresh flower petals goes back many hundreds of years. 
 
For Jasmine, fresh tea leaves are picked by hand in the Springtime and then dried using heat to prevent oxidisation. This ensures the leaves keep their light green colour and prevents the tea from darkening into black tea. The green tea is set aside to await the jasmine harvest.
 
When the jasmine flowers just barely begin to blossom and release their fragrance, alternating layers of the Spring green tea leaves and the jasmine flowers are spread out and placed one atop of the other to a combined height between 10 and 15 inches for 4-6 hours depending on the target temperature and moisture conditions. During this time, the blossoms bloom and release their scent, and the tea leaves absorb the fragrance. 
 
When the jasmine blossoms start to yellow, the blossoms and tea are separated and this process is reapeated up to seven times. When the process is complete, the now pure jasmine scented green tea leaves are hand rolled into pearls.

I wanted the Emerald Jasmine tea to be something just a little different...set apart from the rest on the market. So in addition to the beautiful organic Jasmine pearls I also added Organic Jasmine Green, Jasmine Flower Buds, Kukicha Green (see below), and Olive Leaf to the proprietary blend for the most glorious Jasmine cuppa ever.

Kukicha Green is made of the twigs and stems of the Camelia Senensis plant and contains the highest levels of L-Theanine, the amino acid in green tea that has proven to be calming and to encourage the brain to emit alpha waves of relaxation. 
 
It has a revitalizing fresh aroma, a stronger umami and a less astringent taste than green tea made from the leaves. Since the parts of the tea leaves used for Kukicha are different from other green tea, people find the taste to be quite fresh and unique making it a perfectly beautiful backdrop for the Emerald Jasmine Glory!
