Yorkshire Sourdough & Spelt Teacakes with Figs & Spice
I found the BEST English Teacakes recipe from the Lavender and Lovage blog and the dough could not be more sumptuous and PERFECT.
It's so beautiful to knead that I almost don't want to bake it! And it smells so amazing that I have to keep myself from eating the dough raw. Ha!
I used 100% fresh ground spelt flour (fresh ground flour is LIFE to your body!) then added 4 grams of sunflower lecithin, and 4 grams of vital wheat gluten.
For my spices I chose cinnamon, nutmeg and allspice then soaked dried sugared figs, with lemon, and tangerine zests in hot water with a chai tea bag. As I knead the dough the Fig seeds are spreading which will create the loveliest crunch throughout!
