Pioneer Brown Bread (My yummiest version!)



Funny story, this recipe making the blog today was inspired by the #targetdresschallenge. Have you seen it? Target has a new line of Little House on the Prairie style dresses that have gone viral! From end times jokes to Instagram photos-these dresses have taken over the internet. I thought they were kind of adorable so decided to do the challenge myself with the full intent of keeping the cute dress! But um, after seeing the pics I decided to hurry home to change before Randy could see and ask what in the world I was wearing! This tells me, I would NEVER wear it again and it has to go back! I tried! Lol Just scroll to see for yourself. But even though it was less than flattering on me personally, it made a beautiful backdrop for my Brown Bread photoshoot... Traditional New England Brown Bread is usally steamed baked in an empty can, normally contains rye flour and possibly some corn meal, and it does not call for caraway, oat flour, coffee or date syrup, or oatmilk but I improvised with what I had on hand and THIS is the version I would make again and again. So rich and flavorful, so simple.


TARGET DRESS PIONEER BROWN BREAD



Ingredients

1 1/2 cups white whole wheat flour

1/2 cup oat flour (Optional, if omitted, use 2 c white whole wheat)

1 T coffee grounds, ground super fine

¾ teaspoon baking soda

¾ teaspoon salt

1¼ cups oatmilk

1 T apple cider vinegar

½ cup molasses, or date syrup

¾ cup raisins

2 T caraway seeds

Instructions

Preheat oven to 325° F. Spray an 8½ x 4½-inch loaf pan with cooking spray and set aside.


In a large bowl, stir together the flours with the coffee, baking soda and salt.


Pour the oatmilk, add the apple cider vinegar and let sit while you measure the molasses OR dates syrup.


Gradually stir in the Oatmilk with vinegar and molasses or date syrup, mixing just until combined (do not over-mix). Fold in raisins and carraway seeds.


Transfer batter to prepared pan and make a dome with aluminum foil that has been sprayed with cooking spraym, making sure the edges are sealed tightly to create steam. Bake for 50 minutes. Remove the foil and bake for an additional 10 minutes, or until a knife inserted in the center comes out clean.


The bread should easily slip from the pan to a cooling rack. Serve warm or room temp with a slathering of cream cheese, butter or vegan spread. (I used avocado oil spread and it was perfect!) YUM!
