Caraway Keto English Muffins with Goat Cheese and Fig


My love for the combination of caraway & fruit goes back about 30 years to my days as a graveyard shift waitress at a truck stop in San Clements California. That's where I tasted my first bite of rye toast and strawberry jam and I still adore it!

That independant adventure to Southern California from Chicago did not last long, but my affinity for rye toast with fruit stayed with me. Below is my super fast grown up twist on this favorite caraway combo....

Carraway Keto English Muffin With Goat Cheese & Fig


Ingredients 1 T butter

â…“ c almond flour

½ t baking powder

1 egg

pinch salt

1/2 t caraway seeds


1/2 c goat cheese

2 dried fig (If you are hard core keto you may have to skip the figs and opt for avocado slices!)


Method Melt butter in a ramekin or large coffee cup and swirl to coat halfway up sides

Wisk in egg

Wisk in almond flour, baking powder, salt and carraway seeds

Mix well

Microwave on high for 90 seconds or bake in 350 degree oven for 20 minutes

Invert dish or cup and shake out the bread

Slice and toast

Process goat cheese and fig and spread on warm english muffin. Enjoy!
